Description
A deeply savory and slightly spiced African lamb stew, made quick and easy in an Instant Pot.
Ingredients

- 1 kg lamb shoulder, cut into 5 cm chunks
- 3 medium tomatoes, quartered
- 1 large red bell pepper, roughly chopped
- 1–2 scotch bonnet or habanero peppers, deseeded
- 1 large onion, halved
- 5 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons neutral oil
- 2 tablespoons tomato paste
- 200 ml beef or lamb stock
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon sweet paprika
- ½ teaspoon ground coriander
- ½ teaspoon ground cinnamon
- 1 teaspoon bouillon powder or 1 stock cube
- Salt and black pepper to taste
- 2 medium carrots, cut into chunks
- Fresh parsley or cilantro, to finish
Instructions
- Add the tomatoes, red bell pepper, scotch bonnet(s) and half the onion to a blender. Blend until completely smooth and set aside.
- Pat the lamb pieces dry, season with salt and pepper. Set the Instant Pot to SAUTÉ and add the oil. Brown the lamb in batches for 3–4 minutes per side.
- Add the diced onion to the pot with remaining oil and sauté for 3–4 minutes. Then add the garlic and ginger, stirring for 1 minute.
- Add the tomato paste and cook for 2 minutes until it darkens. Stir in the dry spices and bouillon.
- Pour the blended tomato-pepper mixture into the pot. Stir and cook on Sauté for 3–4 minutes, then pour in the stock and stir again.
- Return the browned lamb and carrot chunks to the pot, seal the lid, and pressure cook on HIGH for 25 minutes.
- When cooking is complete, allow natural pressure release for 10–15 minutes, then switch to venting.
- Simmer uncovered for 5–8 minutes until the sauce thickens to your preference. Adjust seasoning as needed.
- Serve hot over white rice or with fufu, garnished with fresh parsley or cilantro.
Notes
Ensure thorough deglazing to prevent the BURN error and do not skip browning the lamb for added flavor.
