Description

Traditional South African biscuits made with a chocolate-coconut dough, sandwiched with smooth milk chocolate, perfect for tea time.


Ingredients

Scale
  • 200g unsalted butter, at room temperature
  • 120g caster sugar
  • 1 tablespoon golden syrup
  • 1 teaspoon vanilla extract
  • 200g plain (all-purpose) flour, sifted
  • 40g cocoa powder, sifted
  • 100g desiccated coconut, medium or coarse
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 200g good-quality milk chocolate, roughly chopped
  • Optional: 2 tablespoons double cream

Instructions

  1. Cream the butter and sugar until pale and fluffy.
  2. Add the dry ingredients and mix until just combined.
  3. Chill the dough for at least 30 minutes.
  4. Preheat the oven to 180°C (350°F) and prepare baking trays.
  5. Roll and cut the dough into shapes, then create a criss-cross pattern with a fork.
  6. Bake for 12–14 minutes, then let cool completely.
  7. Melt the chocolate and optional cream together to create the filling.
  8. Sandwich the biscuits with chocolate filling and refrigerate until set.

Notes

Use Cadbury Dairy Milk chocolate for an authentic flavor. The dough can be made ahead and stored in the refrigerator for up to 3 days.
