Description
A delicious Korean-American twist on classic meatloaf, featuring a spicy-sweet gochujang glaze that caramelizes beautifully.

- 500g (1 lb) lean ground beef
- 300g (⅔ lb) ground pork
- 60g (1 cup) panko breadcrumbs
- 80ml (⅓ cup) whole milk
- 2 tablespoons gochujang
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon fresh ginger, finely grated
- 4 cloves garlic, finely minced
- 3 green onions, finely sliced
- 2 eggs, lightly beaten
- 1 tablespoon brown sugar
- ½ teaspoon black pepper
- 1 teaspoon salt
- 3 tablespoons gochujang (for glaze)
- 2 tablespoons honey
- 1 tablespoon soy sauce (for glaze)
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil (for glaze)
- 1 teaspoon garlic, finely grated (for glaze)
- Sesame seeds and sliced green onion (for serving)
- Steamed white rice (for serving)
- Kimchi (for serving)
Instructions
- Preheat oven to 180°C / 350°F. Line a 23×13cm (9×5 inch) loaf pan with parchment paper and lightly oil.
- Whisk all glaze ingredients together in a small bowl until smooth.
- Combine the panko and milk in a large mixing bowl. Let sit for 5 minutes until the panko absorbs the milk.
- Add gochujang, soy sauce, sesame oil, ginger, garlic, green onions, eggs, brown sugar, salt, and pepper to the panade. Mix to combine, then add ground meats and mix gently until just combined.
- Transfer the meat mixture to the loaf pan and smooth the top. Bake for 45 minutes.
- Remove from the oven, glaze the top and sides with half of the gochujang glaze, and return to bake for an additional 15-20 minutes until internal temperature reaches 73°C / 165°F.
- Increase oven temperature to 230°C / 450°F, glaze the meatloaf with the remaining glaze, and broil for 3-5 minutes until bubbling and charred.
- Rest for 10 minutes before lifting out, slicing, and serving with sesame seeds, green onion, steamed rice, and kimchi.
Notes
This meatloaf is even better the next day. Slice and reheat in a pan for optimal texture.
