Description
A refreshing Mediterranean salad featuring sweet watermelon, tangy feta, and a zesty honey-lime dressing.
Ingredients

- 1kg (about 6 cups) seedless watermelon, cut into 3cm cubes or triangles
- 1 medium English cucumber, halved lengthwise and sliced into half-moons
- ¼ small red onion, very thinly sliced and soaked in cold water
- 150g (5oz) good feta cheese, crumbled by hand
- Large handful fresh mint leaves, torn
- Small handful fresh basil leaves, torn (optional)
- 2 large handfuls baby arugula (optional)
- Pinch of flaky sea salt
- Pinch of pul biber or red chili flakes (optional)
For the honey-lime dressing
- 3 tablespoons good extra-virgin olive oil
- Juice of 1½ limes or 1 lemon
- 1 teaspoon honey
- Small pinch of fine salt
- Black pepper to taste
Instructions
- Prepare the watermelon by cutting it into 3cm cubes or triangles, laying them on a paper towel to pat gently dry.
- Soak the red onion in cold water for 10 minutes, then drain and pat dry.
- Make the dressing by whisking together the olive oil, lime juice, honey, salt, and pepper in a small bowl until emulsified.
- Assemble just before serving by arranging the watermelon, cucumber, and drained red onion on a platter, adding arugula, mint, and basil, and drizzling with dressing.
- Add the crumbled feta on top and sprinkle with flaky sea salt and pul biber if using. Drizzle with extra olive oil. Serve immediately.
Notes
Ensure the watermelon is cold and ripe for the best flavor. Assemble and dress the salad right before serving to prevent it from becoming watery.
