Watermelon feta salad is one of those combinations that sounds wrong before you taste it and then immediately makes sense: the sweetness of cold watermelon against the salt and tang of crumbled feta, the coolness of cucumber, the freshness of mint, the brightness of lime. It is a Mediterranean summer salad, the kind eaten across Greece and the Levant wherever watermelon and good cheese exist in the same place at the same time. It takes 10 minutes and it is always the first thing to disappear from the table.
Two things keep this salad from becoming a watery, pink-stained mess. First: dress it just before serving, never ahead. Watermelon releases juice the moment it meets acid, 20 minutes of sitting in dressing produces a pool of pink liquid at the bottom of the bowl. Second: scatter the feta over the top rather than tossing it in, tossing breaks the feta into fine crumbles and turns everything uniformly pink. Scattered on top, it stays in distinct pieces with the right texture in every bite.
Ingredients
- 1kg (about 6 cups) seedless watermelon, cut into 3cm cubes or triangles, cold from the fridge. Cut the watermelon, lay the pieces on a paper towel and pat gently dry, this removes surface moisture and prevents the dressing from being immediately diluted when it hits the fruit. Cold watermelon is significantly better than room temperature in this salad.
- 1 medium English cucumber, halved lengthwise and sliced into half-moons, or 2 Persian cucumbers. No need to peel English or Persian cucumbers. Slice about 5mm thick, thin enough to be delicate, thick enough to have crunch.
- ¼ small red onion, very thinly sliced, soaked in cold water for 10 minutes then drained and patted dry. The soak removes the harsh sharpness of raw red onion while keeping its colour and mild flavour. Without this step, raw red onion can overpower the delicate watermelon.
- 150g (5oz) good feta cheese, crumbled by hand, block feta from brine, crumbled by hand into irregular pieces ranging from small crumbles to larger chunks. Pre-crumbled feta is dryer and less flavourful. The irregular pieces mean some bites have more feta than others, this variation is one of the pleasures of the salad.
- Large handful fresh mint leaves, torn, torn rather than chopped. Chopping bruises mint and turns the cut edges black quickly. Torn mint stays bright and releases its oils more gently.
- Small handful fresh basil leaves, torn, optional but excellent alongside mint. The basil adds a slightly peppery, anise note that complements the watermelon beautifully.
- 2 large handfuls baby arugula, optional. The peppery bitterness of arugula contrasts dramatically with the sweet watermelon and is one of the best variations of this salad.
- Pinch of flaky sea salt, scattered over the finished salad. The salt-sweet contrast against the watermelon is one of the defining sensory experiences of this dish.
- Pinch of pul biber or red chili flakes, optional. A light scatter of heat over the top is a popular Turkish and Greek addition.
For the honey-lime dressing
- 3 tablespoons good extra-virgin olive oil
- Juice of 1½ limes, or 1 lemon. Fresh only. Lime has a slightly more tropical brightness that works particularly well with watermelon; lemon is more classically Mediterranean. Both are correct.
- 1 teaspoon honey, balances the acidity of the lime against the watermelon’s sweetness. A small amount, not enough to make the dressing sweet, just enough to round the sharp edge of the lime. Omit if the watermelon is very sweet and ripe.
- Small pinch of fine salt
- Black pepper to taste
Step by step
- Prepare the watermelon. Cut the watermelon into 3cm cubes or triangles, uniform size looks better and eats more evenly. Lay the pieces on a paper towel and pat gently dry. Refrigerate if not using immediately, cold watermelon is the goal.
- Soak the red onion. Place the thinly sliced red onion in a small bowl of cold water. Leave for 10 minutes. Drain and pat completely dry with a paper towel. The soaking removes the sharp bite while keeping the flavour and the vivid purple-red colour.
- Make the dressing. Whisk the olive oil, lime juice, honey, salt and pepper together in a small bowl until fully emulsified. Taste, it should be bright and slightly tart, with the honey just rounding the edge. Adjust lime for more acidity or honey for more sweetness. Set aside.
- Assemble, just before serving. Arrange the watermelon on a wide, shallow serving platter or in a large bowl. Add the cucumber and drained red onion. If using arugula, scatter it through the watermelon. Add the torn mint and basil. Drizzle the dressing over the entire platter. Toss very gently once or twice, do not toss vigorously, which breaks the watermelon into smaller pieces and releases too much juice. Do this final assembly within 10 minutes of serving. Watermelon begins releasing juice immediately when it contacts the lime acid in the dressing. More than 20–30 minutes and the dressing pools at the bottom of the bowl and the salad loses its freshness. Do not dress in advance.
- Add the feta last. Crumble the feta directly over the top of the dressed salad, do not toss it in. Scatter flaky sea salt over the feta. Add a pinch of pul biber if using. Drizzle an extra thread of olive oil over the very top. Serve immediately.

Claire’s note
The watermelon has to be cold and it has to be ripe. Cold watermelon that is deeply ripe, the kind that has been sitting in the sun and has a hollow sound when tapped, is an entirely different ingredient from a pale, slightly mealy room-temperature watermelon. Cut the watermelon the morning of, refrigerate it, and bring it to the table cold. The feta should be the good kind, block feta from brine, ideally Greek PDO feta or a similar quality.
Pre-crumbled feta has been dried out and has a powdery texture that disappears into the salad. Block feta crumbled by hand stays in distinct, creamy pieces with a briny, tangy flavour that is the correct counterpoint to the watermelon. These two things, cold ripe watermelon and good block feta are what this salad is actually about. Everything else is the context.
Variations
- With arugula: Add two large handfuls of baby arugula to the base, the peppery bitterness against sweet watermelon is one of the great summer salad combinations.
- With avocado: Add a diced ripe avocado alongside the cucumber for creaminess.
- With olives: A small handful of Kalamata or Castelvetrano olives scattered through adds a briny depth.
- With balsamic glaze: A thin drizzle of balsamic reduction over the finished salad instead of or alongside the lime dressing.
- With jalapeño: Thinly sliced fresh jalapeño or serrano for heat alongside the sweetness, a popular Mexican-inspired version of the same idea.
